Sharing the Valpolicella appellation in Veneto, Soave can be really good, or it can be really bad. With the large negociants you’ll find mass-produced swill (often said to resemble mouthwash), but going with the smaller producers you’ll find hand-crafted gems. Soave must be made with at least 70% Garganega, with the rest typically made with Trebbiano, which gives the wine texture, and more recently Chardonnay and Pinot Blanc.
